My signature recipe of coffee in Turkish

I only drink coffee Arabica . Exclusively varieties of Mocha . Preference is given to Yemen . But, do not disdain the Ethiopian or Eritrean . This recipe of coffee I learned in Turkey, the only “but” altered to your taste.

1. Take exactly 21 coffee bean (1).

2. For 30 seconds at a power of 800 Watt fry them in the microwave.

3. Very, very finely milled it (2). Literally, “in the dust”!

3. Pour ground coffee in Turku, pour 150 ml of cold, but pre-boiled water.

4. Not crushing, entirely throw in Turku one black pea, white pepper and allspice.

5. Take a very small, no more than ¼ gram weight garlic clove, doing it with two opposite sides of the longitudinal cut crosswise in relation to each other and just throw it in Turku.

The third time put the coffee on the fire, the third time I bring to the appearance of foam, remove the pot and poured into cups still foaming scalding hot coffee!

Coffee, prepared according to a similar recipe many times I was treated Tamils and South India in the port Tuticorin, and in Eastern India in the port of Madras (1) and in North-Eastern Sri Lankan port of Trincomalee.

1. Take:

– 1 large (diameter 5-6 mm ) peas of black pepper,

– 3 small (diameter 1.5 – 2 mm ) grains of white pepper,

– 1 medium size (length 3-5 mm ) anise seed,

– 1 medium size (length 6-7 mm ) seed of the anise;

2. Within 45 seconds at a power of 800 Watt fry it all in the microwave.

3. Very, very finely ground (2) coffee beans, cocoa beans and spices. Literally, “in the dust”!

4. Peresypkin mixture to Turku, add half a coffee spoon without top ground cinnamon, large (1/4 CC (3) ) a crystal of sea salt and pour it all 250 milliliters of chilled in the fridge coconut milk (4) .

5. Put Turku on very high heat and, stirring constantly with a special very long spoon, bring coffee to a boil. Once the coffee starts to boil, slow down the heat to a minimum and, stirring constantly, warim coffee for 10 minutes .

6. 30 seconds before the end of cooking, throw in coffee 1 red stamen of saffron.
